  1.                      FIESTA CHICKEN FAJITAS

  4. 4 boneless skinless chicken breasts, cut in strips
  5. 1/2 c. lime juice
  6. 1 minced garlic clove
  7. 1 t. chili powder
  8. 1/2 t. cumin
  9. 2 T. oil
  10. 1 medium onion, cut in wedges
  11. 1/2 c. each red, yellow and green pepper strips
  12. 1/4 c. salsa
  13. 8 8-inch flour tortillas, warmed
  14. 1-1/2 c. (6 oz.) shredded mild cheddar
  15.  
  16.           Marinate chicken in juice, garlic and seasonings for 15
  17. minutes.  Cook in oil for 2 to 3 minutes.  Add onions and peppers
  18. and cook for 3 more minutes.  Stir in salsa and spoon onto
  19. tortillas.  Top with cheese.  May substitute 1 lb. shrimp for
  20. chicken.  Makes 4 servings.
